Fresh Wild Ramps

Wild-harvested whole ramp plants from 12 forested acres in the Brandywine Valley. Our ramps emerge earlier than anywhere else on the Eastern Seaboard — thanks to underground springs and a south-facing hardwood canopy.

Bundles are about 12 plants per pound with many bulbs, stems, and leaves intact. Harvested that morning in a zig-zag pattern that thins the patch without wiping it out. Rinsed in the field — a quick rinse at home and they're ready to cook.

Scramble them into eggs. Grill them whole with olive oil and salt. Pickle the bulbs. Blend the leaves into pesto. Chop everything and fold into compound butter. Or just eat one raw in the forest like we do.

Small Batch Ramp Butter

Just four ingredients: sweet cream butter, sea salt, fresh JunXion Farm ramps, and a drop of lemon juice. Hand-mixed in small batches during the six-week harvest window.

Melt it on a sizzling steak. Spread it on crusty bread straight from the oven. Toss it with pasta. Fold it into scrambled eggs on a Sunday morning. Drop a knob into mashed potatoes and watch people ask what your secret is.

Each 4 oz jar is made from ramps we harvested ourselves in the Brandywine Valley — the same forest, the same hands, the same week the plants came out of the ground.

Freeze for up to 6 months. Refrigerate after opening and use within 2 weeks.

Pick-Your-Own Ramps

Spend a morning in the forest with us. You'll walk 12 acres of Brandywine Valley hardwoods, learn to identify wild ramps by sight and smell, and harvest a full pound with your own hands.

We'll show you how we harvest sustainably — the zig-zag pattern, why we skip flowering plants, and how to read a patch so you thin it instead of wipe it out. Then we'll teach you the root-plate replanting method so you can grow ramps at home from the scraps you'd normally throw away.

You leave with 1 lb of fresh ramps, a printed planting guide, and the knowledge to do this responsibly for the rest of your life.

Limited to 10 participants per session. All ages welcome — kids love it.

What to bring: Closed-toe shoes or boots, long pants, a bag for your ramps, and a willingness to get your hands dirty.
